Wild Harvest is a celebration of nature, culinary artistry, and adventure. Each episode pairs expert forager Les Stroud (a.k.a. Survivorman) with Chef Paul Rogalski of Calgary’s Rouge Restaurant, as they forage wild ingredients across North America and turn them into unforgettable dishes.

In each episode, Les ventures into diverse landscapes across North America to forage for wild, seasonal ingredients – from coastal shorelines to boreal forests. He then brings his harvest to Paul, who transforms these raw, often unfamiliar plants, fungi, and proteins into inspired gourmet dishes.

The show blends the thrill of exploration with the artistry of fine dining, offering viewers a rare look at the journey from wild ingredient to plate. Along the way, it celebrates sustainability, the deep connection between food and environment, and the joy of discovering flavours hidden in plain sight.

Season 3 (Now on APT, PBS & Create TV)

The adventure continues! Season Three now airis on American Public Television and PBS, inviting viewers to experience more wild-foraging expeditions across North America.

While episode breakdowns aren’t yet public, the format remains: Les forages, Chef Paul creates, and viewers gain insight into unfamiliar edible landscapes.

Season 2 (2022)

Season Two continues the same spirit of discovery. Foraging landscapes include wild hillsides and coniferous forests, where ingredients like spring beauty, catnip, and Sitka spruce push Chef Paul to stretch his culinary creativity.

Season 1 (2021)

The inaugural season sets the stage with a bold exploration of diverse ecosystems – from the Oregon coast to the boreal forests of Canada. Each episode highlights one wild ingredient (or handful!), with Paul crafting inventive dishes on the spot.

Throughout, Season One showcases Paul Rogalski’s ingenuity in turning bold, unfamiliar ingredients into dishes that taste as adventurous as they look.
